Patriotic Picnic Quinoa Salad

The sunshine beaming in our studio is calling us outdoors for a picnic lunch break. Taking a pause in our workday to enjoy a nourishing lunch with the team is something we all look forward to! The food fuels our bodies as the laughter fuels our spirits.

This recipe is flag-inspired for your Fourth of July celebrations with friends and family. Bursting with bright goji berries, red quinoa, creamy goat cheese, pine nuts and blueberries - every flavor shines through in this tasty combo. It is tossed in a lemon basil vinaigrette and best when served with fresh-squeezed lemonade. 

Red, White & Blue Quinoa Salad

 

Ingredients :

1 c. Dry red quinoa

1 c. Blueberries

1/3 c. Pine nuts

1/3 c. Dried goji berries

1/3 c. Crumbled goat cheese

1 tbsp. Extra virgin olive oil

Juice from one lemon

1-2 tbsp. Chopped fresh basil

Salt + Pepper, to taste

 

Directions : 

Cook quinoa as directed on package. Allow to cool. Whisk olive oil with lemon juice, fresh basil, salt and pepper to make a vinaigrette dressing. Mix together chilled quinoa with the remaining ingredients. Lightly toss in vinaigrette and pack for your Fourth of July celebration!

A simple braided hairstyle is the perfect summer up-do to keep cool and look on trend!
