Firecracker Ice Pops!

Do you remember eating those red, white and blue popsicles that left juicy stains on your white t-shirt as a child? Firecracker pops, as I recall, are reminiscent of July cookouts and mid-summer pool parties. The countdown has begun until July 4th and we are starting our celebrations early with a twist on this frozen summery treat! 

I made the childhood favorite a little healthier with real berries, agave, freshly squeezed lime, and a layer of coconut in the middle! Each layer tastes refreshingly different, yet all of the flavors compliment one another. This recipe is super easy to make and the result is exceptionally tasty!


Ingredients :


3 c. Fresh strawberries*

2 tbsp. Lime juice

3 tbsp. Agave



1 can coconut milk (sub for coconut cream for extra creaminess!)

3 tbsp. Lime juice

3 tbsp. Agave



3 c. Fresh blueberries*

2 tbsp. Lime juice

3 tbsp. Agave


Directions : 

Blend strawberries, lime juice and honey to make puree. Pour into ice pop molds 1/3 of the way full. Freeze first layer for 45 minutes. Blend the white layer ingredients, pour on top of the red layer, another 1/3 full. Place back in the freezer for another 45 minutes. Blend blueberries with remaining ingredients for the blue layer, fill molds almost to the top, leaving room to expand as the pops freeze. Freeze for 3-4 hours or until solidified. Remove from mold and serve! If the pops feel stuck in the mold, run under warm water until they release. 


*I heated my berries before pureeing to make the colors vibrant. Not a necessary step, but it does make the pops even more colorful!
