This time of year, our schedules seem to pick up. Whether going back to school, being a mom, or putting in a couple extra hours at the office - life can get busy! Having healthy grab-and-go food prepped for those run around days will keep you fueled and focused.
This no-bake recipe can be made ahead of time so that you can pack it to take with you wherever you go. The whole grain oats combined with healthy fats from cashew butter and sliced almonds give your body sustained energy and brain-boosting power! And just as a bonus - dried tart cherries help repair sore muscles for those of you who love working out! Dark chocolate even contains antioxidants, but mainly just puts you in a good mood, which we are all about 👍🏼
1 1/2 c. oats
1 tbsp. chia seeds
1 tbsp. orange juice
1/2 c. cashew butter
1/3 c. honey
pinch of salt
dash of vanilla
1/4 c. mini dark chocolate chips
1/3 c. dried cherries
1/3 c. sliced almonds
1. Combine oats and chia seeds with orange juice, cashew butter, and honey. Stir in a pinch of salt and a few drops of vanilla.
2. Fold in chocolate chips, cherries, and almonds.
3. Line a baking sheet or 16x16 dish with parchment paper. Press the dough into pan and evenly distribute to edges.
4. Place in refrigerator to set for about 30 minutes. Cut into bar shapes and pack for later or serve right away!
